docs: mark TUI as deprecated in roadmap to match CLAUDE.md

Resolves inconsistency between CLAUDE.md/AGENTS.md (TUI deprecated) and
docs/roadmap.md (TUI listed as completed feature).

- Strike through TUI items in 3 roadmap sections
- Add deprecation note to TUI-to-GUI upgrade section
- Reference AGENTS.md and hive open as replacement

Fixes #5941
